Raspberry Bramble Mocktail

Eye catching deep red cocktail, perfectly poised between fruity, sour, sweet
The Bramble is a modern classic created in London by bartender Dick Bradsell, named in honour of the blackberry bushes he used to forage from as a child. It's simple, elegant and wonderfully refreshing.
It's traditionally made using London dry gin, & blackberries. In this version we have chosen to use raspberries as our hero. Fresh raspberries are muddled into the cocktail shaker, providing a sweet and fruity flavour that gives this drink a beautiful deep red colour. The raspberries add a subtle tartness and slight floral notes that pairs well with the flavours of Banks Herbarium.
Ingredients
- 60ml Banks Botanicals
- 20ml Lime juice
- 20ml Pineapple juice
- 15ml Vanilla Syrup*
- Cinnamon sugar
- 4-6 Raspberries
- Garnish with 2 blackberries
- Coupe or Martini Glass
Recipe
- Rim the top of the glass with lime juice, then frost the tip of the glass with cinnamon sugar.
- Put Glass aside.
- In a shaker muddle (crush) raspberries.
- Pour all ingredients into the shaker & shake.
- Add ice to the shaker and shake again to chill.
- Strain and pour into a coupe glass.
- Garnish with 2 fresh blackberries.
- Serve & Enjoy
Tip
Vanilla Syrup is easy to make. You just need, equal parts of water and sugar. Heat in a saucepan until the sugar has dissolved. Add a few drops of vanilla essence and flavour to your taste.
For a variation serve in a rocks glass with crushed ice. Have the glass prepped before you start. The way it dilutes and allows the flavours to slowly reveal themselves is what a Bramble is all about.

Mix Notes
When mixing drinks with a non-alcoholic spirit such as Banks we want to reduce time that Banks mixes with Ice before the drink is served.
This is because the flavours are water soluble so as the ice melts it dilutes the flavours. It is suggested to always dry mix ingredients in a shaker before pouring over ice or adding ice to the shaker.
